David will be out of town Tuesday through Thursday so this menu will be rather abbreviated.
Monday:
I had a package of sausage in the freezer so I decided we’d have biscuits and gravy tonight. I’ll cook the whole pound of sausage but only use about a third in the gravy. I’ll then divide the remainder in half and freeze for a couple of future recipes. I’ll also freeze the remaining biscuits.

Tuesday through Thursday:
Since I won’t be cooking for David I’ll likely make myself salads (I bought a lot of organic salad greens when I went shopping last Thursday) for dinners. I also have shrimp and a couple of types of fish in the freezer so one night I may cook one of those since I love seafood and it’s really not a favorite of David’s.
Friday:
I like to make our Friday night dinners a bit special and more leisurely. David puts in long, hard weeks at work and this one will be even more so since he’ll be traveling. I like to greet him on Friday nights with a cocktail and a little snack so we can catch up a bit before I cook dinner. Serving dinner in a couple of courses is another way I can make dinner more of an experience.

- tossed green salad (first course)
- spaghetti with homemade sauce
- steamed broccoli
- garlic bread
- coffee and dessert (either homemade chocolate chip cookies or maybe a fruit cobbler)
