This week’s menu includes a night of grilling on the back patio (yay, Springtime!), one of my specialties for company, a St. Patrick’s Day dinner and more.
Dee’s Menu
Monday
It’s going to be in the low 80s today so I think it’s time to dust off the grill and eat outdoors.

- homemade potato salad (will make extra for tomorrow)
- fresh fruit
Tuesday
We are having some musician friends over to hear their new album. I’m going to feed them, of course. 🙂
- jambalaya

Wednesday
- chef salads
- homemade bread (hopefully!)
Thursday
It’s St. Patrick’s Day so tonight’s menu will be a nod toward my Irish ancestry.
Friday
We are attending a house warming barbecue. I haven’t decided yet what I’ll bring – maybe a big salad with lots of goodies in it.
Saturday
- spaghetti
- salad
- garlic bread
Sunday
We’ll go out for Mexican food after church and save half for dinner.

It all sounds yummy, Dee! I was at a friend’s for dinner last week, and she made chef’s salads, and she put baby corn in hers. Have you ever had baby corn in a salad before?? I never had, but it was really good!

Homemade potato salad might have to be on my menu sometime this week. I have potatoes I need to use up, plus I’ve had a craving for potato salad, too. No grilling for us yet – we’re back to cold temps (40’s) and nothing but rain. One dish I have planned for this week is a recipe for chicken thighs with shallots, garlic, lemon and white wine, made in a Dutch oven. Monday: cheesy fries with vegetable gravy.
Tuesday & Wednesday: garlic-rosemary roast potatoes with baby carrots, green beans, and cauliflower.
Thursday: I’m going to have the leftover veggie spaghetti bake that’s in the freezer from last week.
I haven’t decided about the other three days. But I’ll need to either plan something simple for Saturday, or make sure there are leftovers from Friday, because I have a pre-roleplaying character creation discussion on Saturday evening.

The garlic-rosemary potatoes with carrots, green beans and cauliflower sounds delicious. I can hardly wait until our local farmers market is in full swing. I love to make summer meals just from fresh veggies.
