Monday:
I’m meeting a friend in the city and taking her to lunch to celebrate her birthday. While I’m up there I’m getting the Prius serviced, dropping off glass recycling, and hopefully finding myself an Easter outfit. Since I’ll be gone all day I was going to put red beans in the crockpot so all David would have to do is start the rice. Late last night I went to the kitchen to cook up the sausage and veggies for the beans so I wouldn’t have to do it in the morning but my sweet husband told me he would take care of his own dinner and not to worry about it. He’s a good one. 🙂
Tuesday:
I cooked half a package of bacon Friday night to crumble onto our wedge salads. We didn’t use all of that so the rest went into a veggie dish I made Saturday night. I still have the half package of uncooked bacon which I need to use so I think BLTs sound good. I’ll pick up a loaf of French bread when I’m in the city on Monday and use that to make the sandwiches.

Wednesday:
I have a noon meeting and evening choir rehearsal so an easy meal with minimal cleanup is in order. I can chop the veggies ahead of time.

Thursday
David leaves on yet another business trip – trying to get everything caught up before our April New Orleans trip! – so I’m on my own for dinner Thursday and Friday. Our church will be hosting a Seder supper before our Maundy Thursday service.

Friday:
I’ll just do something simple like a salad or rice and shrimp. Our church’s Good Friday service begins at 8 p.m. and the choir will be singing. I don’t like to eat much before I sing.
Saturday:
We will be going out with friends to celebrate a birthday. We are meeting up at a local wine and dessert bar which also sells good pizzas, panini sandwiches, etc. so we’ll just eat there. David will have just returned from his trip and I will have spent the day cooking for Easter. The woman who always bakes the bread for our church communion fell and broke a vertebrae so I volunteered to bake the communion bread. We have a church breakfast potluck before the Easter service so I’ll make something for that. And then after church the family gathers at a cousin’s house for lunch and an Easter egg hunt. Years ago we all decided to make it easy so everyone brings their own lunch. Most pick up KFC but I just don’t care for it so I’ll make our own. Here is what I’m planning to cook ahead on Saturday for our Easter lunch:
- fried chicken
- homemade potato salad
- homemade coleslaw
- deviled eggs
- fruit salad
Just thinking about the week ahead makes me tired but there are also so many good things in it. I hope everyone has a terrific week!
