Menu Monday ~ March 6, 2017

This week I’ve got a couple of new recipes and a family favorite on the menu. We have a nice mix of meatless, chicken, beef and fish. As well as potatoes, rice and pasta for the starches. Let’s see what’s cooking this week:

Dee’s Menu 

Monday

David will be out of town on business. That’s a good time for Chris and me to go out for sushi (David’s not a fan of sushi). 

Tuesday

  • Chicken Provencal
  • mashed potatoes
  • salad
  • corn on the cob
  • baguette

Wednesday

I think I am finally free of the asthma attack that plagued me for weeks. That means I might actually make it to choir rehearsal this week! It starts at 7 and is a 25 minute drive. That means a quick meal with minimal cleanup is a good idea. I’m going to try a new recipe. 

  • Mujadarra (rice and lentils with caramelized onions – I am going to try this in my Instant Pot)
  • salad

Thursday

David and I have a meeting from 7-9 but we’ll eat before. It’s National Meatball Day so I think I’ll make one of David’s favorites. 

  • sweet and sour meatballs
  • rice
  • fruit salad

Friday

  • Garlic Parmesan Baked Halibut
  • buttered fettuccine
  • cauliflower
  • tossed green salad
  • toasted baguette

Saturday

  • grilled hot dogs or brats
  • homemade coleslaw
  • chips and dip
  • fresh fruit salad

Sunday

Mexican food after church…save half for dinner.

    Your Wednesday dinner sounds interesting….

    Here’s my tentative menu for this week:

    Monday: Cheesy fries.
    Tuesday: Vegan French dip baguettes (using a recipe a friend gave me a couple of months ago, which I keep meaning to try).
    Wednesday: Breakfast wraps.
    Thursday: Tomato soup with fresh bread, plus some crackers and cheese.
    Friday: Haven’t decided yet.
    Saturday: Pasta and sauce (haven’t decided what kind of sauce yet though).
    Sunday: Veggie roast.

      I’m interested in hearing more about those vegan french dip baguettes. How did they turn out?

        They turned out really tasty. Messy, but tasty. I’m not sure you’d eat them though… They involve mushrooms. Although, I suppose you could use something else in place of the mushrooms.

        I didn’t get a chance to add them to this month’s food themed post, which went up on the weekend, but if you check out next month’s post, you’ll be able to take a look at the recipe.

          That’s so often the issue for me with vegetarian or vegan recipes – mushrooms. They are such a good substitute for meat…unless you happen to be severely allergic. Ha!
