I’m writing this Sunday night after watching the final episode of Downton Abbey. <sniff> Oh, how I will miss that series! Well, I suppose I will have to set aside my sorrow and figure out this week’s menu.
Dee’s Weekly Menu
Monday
- Chicken with Cherry Wine Pan Sauce (didn’t end up making it last week)
- salad
- broccoli
- baked potatoes
Tuesday
We have a meeting at 5:30 so we’ll need something that can be cooked quickly when we get home.
- French toast
- eggs
- sausage
- fresh fruit
Wednesday
David will be out of town and I have choir rehearsal. I’ll just make myself a sandwich or salad.
Thursday
- Lentil soup
- Homemade Cheddar Biscuits
Friday
- spaghetti and meatballs
- salad
- garlic bread
Saturday
- grilled hamburgers or hot dogs (haven’t decided which)
- homemade potato salad
- fresh fruit
Sunday
Either leftovers or something simple like grilled cheese and soup.

I like reading your menu ideas every week. I was going to put boneless chicken breasts in the Crockpot today with my mexican sauce concoction (verde salsa, a little tomato sauce, a chipotle pepper with a little of the adobo sauce) to make tacos, but the chicken is still hard as a rock this morning. (I took it out of the freezer last night and put it in the fridge.) So, my sweet husband is bringing home Mediterranean food from Pita Inn, which is on his way home from work. 😉 We’ll have the Crockpot chicken tomorrow night. Not sure about the rest of the week. You know how I fly by the seat of my pants most of the time!

It’s always a nice little treat when we get an unplanned night off from cooking. And dishes! We had the cherry wine chicken dish last night and it was SO good. Definitely a keeper.

Monday: veggie spaghetti bake (basically, a veggie pasta bake made with spaghetti instead of regular pasta).
Tuesday: there were a lot of leftovers from last night’s dinner… I often forget how much pasta bulks up when it cooks. I’ve put some in the freezer for another time, but I’m also having some for dinner tonight.
Wednesday: root vegetable mash with cauliflower and green beans.
Thursday: I don’t have roleplaying this week, but because of roleplaying happening on many Thursdays, I’m in the habit of trying to keep Thursday’s dinners simple, eat leftovers, or get take-out. I don’t really want to do take-out, and the only leftover meal I have in the freezer at the moment is from Monday – which I don’t want to be having again so soon after having it a couple of days in a row – so I’ll make enough on Wednesday so I can have the leftovers from that on Thursday.
Friday: spinach and mushroom risotto.
I’m sure you won’t be surprised to learn that I haven’t decided what I’m having for Saturday and Sunday yet.

I have a wonderful recipe for butternut squash risotto which I haven’t made in quite awhile. Hmm…you’ve given me an idea. Have a great week!
