This is going to be a crazy week as we prepare for the 7th annual Happyland Music Festival in our backyard. Over 100 people will be on our property camping out and enjoying 25 musical acts, plus karaoke, over the course of the three day weekend. Yes, we are a little bit crazy but honestly, this is the most fun event of the year. It’s also a lot of work to pull it off so meals will be VERY simple this week.
Monday:
I cooked a roast a couple of days ago so I’ll use the leftovers in our salads, along with boiled eggs and grated cheddar cheese.
- Chef salads
- crusty Italian bread
- fresh strawberries
Tuesday:
A couple of weeks ago I made pasta sauce with some fresh veggies in it. I froze half of it and will use it in this meal along with about half a pound of hamburger which I have frozen and will cook to go in it.
- spaghetti and meat sauce
- green beans
- salad
- the other half of the Italian bread from Monday night
Wednesday:
This is my super easy, go-to meal for those nights I need something fast and with minimal clean-up.
- homemade tomato bisque
- quesadillas
Thursday:
We will most likely attend at least part of the show one of our bands is doing at Papa Gjorgjo’s (local Italian restaurant). If so, we will eat there. If not, I’ll have David pick up a pizza from there.
Friday through Monday:
It will be a blur of music, dancing, grilled hot dogs and hamburgers, chips, fruit, sandwiches, brownies and jello shots. On Tuesday I’ll be making a pot of jambalaya which I’ll freeze and then thaw at some point over the weekend. My mom is bringing a big pot of stew on Saturday, as well as a couple of batches of brownies. One of the attendees is bringing homemade cinnamon rolls. David buys about 75 breakfast biscuits from a local place and I make lots and lots of coffee. Everyone brings their own food but many of us make some extra things to share. It’s like a big, happy commune and I can’t wait!
