This is going to be short and sweet. Our annual Happyland Music Fest starts this Friday so it will be a busy week preparing for it. I’ll be keeping our meals uncomplicated with easy prep and cleanup!
Monday:
- broccoli potato soup
Tuesday:
- cheese enchiladas
- homemade guacamole and tortilla chips
Wednesday:
- spaghetti
- salad
- French bread
Thursday:
I’ll be making a couple of big pots of jambalaya for our music festival so we’ll have some of that for dinner.

Friday – Sunday:
Happyland Music Fest! Everyone brings their own food for the weekend and we have grills set up. I’ll have the aforementioned jambalaya to share with the crowd and I’ll also have hamburgers and hotdogs for David and I to throw on the grill. There may or may not be a menu next Monday. We will no doubt be in recovery mode. Ha!
