Wow, that was quite a weekend! We hosted our 5th annual music festival in our backyard. Over the course of the weekend I would estimate we had somewhere around 100 people here. I counted 24 tents set up in our yard. It was epic. And so was the mess left behind. Ha! I spent hours washing dishes and sorting out the mess in my kitchen Sunday evening and Monday. I’m almost done in there but still have a lot of cleaning up outdoors, vacuuming, and sorting the items people left behind. So if my menu seems a bit on the “quick and easy” side this week, I think you’ll understand.
Monday:
We ate a late lunch and then went to a 7:20 movie last night. We really weren’t hungry enough for another meal so we indulged in popcorn and candy. Hey, raisins are fruit, right?

Tuesday:
I had made two big pots of jambalaya last week and froze it in smaller containers for our music fest. We didn’t use it all so I’m serving some tonight.

Wednesday:
We bought hot dogs and buns to have on hand for anyone who failed to bring enough food this weekend. I’m freezing some but figure that grilled hot dogs and leftover potato salad will be easy. I’m hoping there will be fresh corn at the farmers market Wednesday morning.

Thursday:
The vegetable medley will be made up of whatever fresh veggies I am able to find at the farmers market. I will serve it over rice, most likely.

Friday:
I really want to make use of the grill as much as possible this summer.

We had a huge bonfire Saturday night. I had suggested people bring the ingredients for s’mores but no one did this year. Perhaps they remembered that David builds such a huge fire that it’s too hot to get close enough to actually roast marshmallows. Ha! Anyway, I did buy a bag of marshmallows, box of graham crackers and some chocolate bars so I’m going to talk David into lighting a smaller fire one night this week so we can make s’mores. I’m determined to do fun things like that often this summer.
