Hello, friends! I hope your week is getting off to a good start and that your weather is as gorgeous as ours. This weekend was simply perfect and I see lovely weather ahead for us this whole week. Yay! You’ll notice that we have grilled burgers on our menu this week. It always makes me happy when we can fire up the grill. Let’s see what else is cooking this week.

Tuesday

Wednesday
- grilled burgers
- lettuce, tomato, onions and other burger toppings
- sweet potato fries
- corn on the cob
Thursday
We have an event this evening. David is setting up sound for live music and since it’s at a Mexican restaurant we’ll eat there.
Friday
- French roasted chicken
- roasted red potatoes
- broccoli
- tossed green salad
- toasted baguette
Saturday
- big salads with leftover chicken, veggies, etc.
Sunday
It’s Mothers Day and my son-in-law’s birthday. We usually all go out to eat together.

I admire you doing this, Dee. I live with a flatmate now, and we have different tastes, and work different hours, so I don’t do a menu plan. But what I do is have a few staples whereby I can create a meal asap I get home.

I’m sure if I were only preparing food for myself I wouldn’t be as inclined to create a weekly menu. In fact, when David is away on business trips I don’t really plan ahead for myself. I just eat something simply like a salad or leftovers. I’d like to hear what sort of staples you keep on hand for meals.

Our weather is perfect. It’s lovely weather, but hasn’t yet gotten in to the habit of reaching the temperatures that make me too hot (and therefore uncomfortable and cranky). We don’t have a grill to fire up, but I see a lot of salads in my future… My shopping mostly involves salad fixings, fruit, and cold drinks this week, and that will likely be the case for the next couple of months.
Last night I had a salad with garlic mushrooms added to it. Garlic mushrooms, feta cheese, potato salad, onions, tomatoes, cucumber, sweetcorn, and a little bit of lettuce. I don’t like to have lettuce all the time, but I did yesterday.

I love salads, too. I have a Pinterest board where I’ve been pinning salads. I should make a point of choosing at least one new one to try each week during the summer. The salad we had last night along with the shrimp and veggies consisted of mixed spring greens, cherry tomatoes, fresh blueberries, thinly sliced red bell pepper, feta cheese and balsamic dressing. There was a bit leftover and I’m hoping it won’t be too soggy for my lunch.
