One of the best parts about Thanksgiving is the leftovers! You’ll see this fact reflected in this week’s menu.
Monday:
- Turkey enchiladas
- rice
- chips and salsa
Tuesday:
- scalloped potatoes with diced ham
- tossed green salad
Wednesday:
- ham and beans
- cornbread
Thursday:
This is the night of our town’s Christmas parade. If the weather isn’t too bad I’d like to go see it and then go out to dinner afterwards. One of our bands is playing at the local Italian restaurant. David will be out of town but I’d still like to do this.
Friday:
We are having our Happyland Music Alliance Christmas party this night at the local wine and dessert bar. One of our bands is playing. I’m planning to bring a cake:
There will probably be other snacks so we will either just eat something light before we go or order sandwiches or pizza at the bar.
Saturday:
We are attending The Nutcracker Ballet at the local university at 7 p.m. That means an early dinner at home or late dinner afterwards. At this point I am not sure which we will do.
Sunday:
We will eat out after church and save leftovers for dinner.

Ever since I went back to work, we have been eating “by the seat of our pants” as it were. All planning is gone 🙁 We did make some very tasty soup from our turkey carcass and leftover meat. I simmered the carcass, legs, and wings for a few hours, then strained out all the big bits. Dylan chopped carrots, onion, and cabbage to add, then found part of a bag of okra in the freezer and put that in also. A little seasoning and… wow, was it good.

Enjoy the Nutcracker! I wish there was a local production I could attend this year. When my daughter was around 5 I took her to see it. She was far from a Nutcraker kind of girl and actually fell asleep halfway through!

I took my kids when they were 3 and 6. We sat toward the back because I wasn’t sure how long a 3 year old would last. When they paused for intermission, Lisa (the 3 year old) looked up at me and with tears in her eyes said, “It’s not over yet, is it?”. She was spellbound by it.

I hope you enjoy the parade. Ours was this past Saturday. We watched it from the window, and “hopefully” have some photos of some of it (we did our best… It was raining a lot though, so they’re not going to be great ones).
I also hope you enjoy watching The Nutcracker. I’d love to go to a live version of The Nutcracker. I’ve never been to a live performance of it.
As for my menu for this week…
Monday: We’d ordered Napolese on Sunday from a local take-away place we thought we’d try, and there were leftovers, so that was Monday’s dinner. I had Aloo Dum (potatoes and peas in a tomato and herb sauce, basically) and Pharsi Tarkari (butternut squash cooked in spices) with a Chapatti (piece of flat bread).
Tuesday: we’re making homemade pizza.
Wednesday: baked potato with cheese and veggies.
Thursday: either something quick and simple made at home, or something out while we’re finnishing up our Christmas shopping; depends what we decide on the day.
Friday, Saturday & Sunday: I have no idea.
