I’m writing this menu late Sunday evening after looking at the week ahead. So far we don’t much planned this week and that’s a good thing. We have a vacation coming up soon and I have a long list of things I want to finish before we go. Such as…Christmas cards. Yep, I bought my cards this summer and I hope to get them all addressed before we leave. Fingers crossed!

That’s a great menu. Also, it’s nice you have a quiet week coming up. Oh, and well done on being ahead of things so far with your Christmas cards. 😉
Here’s my menu for the week:
Monday: pizza and potato skins (yeah, I ordered from the place that delivers vegan pizza. No, I don’t feel guilty for it).
Tuesday: baked potato with “cheese” and beans (because I have a lot to fit in to today, and it’s a quick and easy dinner).
Wednesday: porridge/oatmeal (because I have dentist, and probably won’t want much more than that anyhow).
Thursday & Friday: pasta with pumpkin sage sauce, plus pumpkin pie (because Halloween).
Saturday & Sunday: chilli and baked potatoes, plus home made garlic bread.

I remembered this morning I forgot to tell you about the banana blossom.
I posted full details on my blog (see Tuesday’s post) but the short version is that it was nice, but I prefer the meat substitutes I’ve been using (mushrooms, tofu, and jackfruit). I really don’t think it worked in the curry at all, but the burgers were nice enough that I did really enjoy those, even if banana blossom is only an “OK” meat substitute in my opinion.
