Fall arrived here in Oklahoma this weekend and while it will be back into the 70s and low 80s this week, the cooler mornings and evenings mean a switch to cool-weather meals seems reasonable.
Monday:
I have leftover mashed potatoes so I’ll make a shepherds pie with corn, peas, carrots, onion, squash, green beans and cannelli beans. Being so chock-full of veggies, plus protein from the beans makes this a one-dish meal. A couple of freshly-baked cookies and a cup of coffee will finish off the meal nicely.

Tuesday:
I’m currently out of salad greens so we’ll opt for soup as a starter.

Wednesday
We both have things to do in town so we are going to meet up afterwards for a late dinner.
Thursday:
- shrimp and sausage gumbo
- French bread
Friday:
- chicken (I haven’t decided how I plan to cook it yet.)
- garlic mashed potatoes
- green beans
- salad
