Monday:
I made two pans of lasagna last night for “Family Dinner and Game Night” and have enough leftovers for tonight. Yay!

Tuesday:
Last week I cooked a huge pot of black beans, used part for a casserole I took to Compassion Outreach and froze some. I left out enough for another Mexican casserole, and also cooked enough extra rice. Easy dinner which is good since I have a meeting in the morning and hair appointment in the afternoon.

Wednesday:
Hopefully I’ll make it to town in the morning for the farmers market. It won’t be long before it shuts down for the year and I haven’t had nearly enough fresh, seasonal veggies.

My friend, Frank, who shared the guest post recipe last Friday, suggested unicorn in a nice sauce piquant for one of our meals this week but we can hardly even find organic meat here in Ada. I can’t imagine where I’d have to go to get unicorn.
