I checked our calendar and checked it again. Unless something comes up that we don’t yet know about we should be able to eat dinner at home all week. I know! I’m as surprised as you are. David has an Emergency Medical Responder refresher course on Tuesday and Wednesday evenings but as long as we eat around 5:15 we can make this work.

I’m hoping to make time to bake bread today. Fresh, whole wheat bread still warm from the oven and slathered in butter is almost a meal in itself. David has his EMR refresher course at 6 and I’m planning to attend a poetry series event at the local university which begins at 6:30 so that’s another reason for a simple meal with easy cleanup.

I’ll make a big pan of enchiladas and take some to my parents on the way to choir rehearsal.

- Slow Cooker Pork Tenderloin with White Wine Butter Sauce

Saturday
For the first time in ages we have an entire Saturday with no commitments! We plan to sleep until 9 a.m. (assuming no one calls us) and then each of us is going to work on a project for a couple of hours. David is going to clean out his closet and I’m working on our laundry room. Then we are going to do something fun. We may go see a movie or maybe drive somewhere out of town for a nice dinner. I can’t wait!
Sunday
Mexican food after church and save half for dinner.

I see in the comments you had a bit of a change of plan, but I hope the rest of the week went to plan.
Here’s my menu:
Monday: The day was just crazy, so I didn’t get much done, and we ended up ordering pizza.
Tuesday: Carrot dogs with mango avocado salsa, plus slices of fresh melon.
Wednesday: We ate out after dropping Lilie off at the vet for her spay, so we’ll just grab sandwiches or something after we pick her up later.
Thursday: Coconut bacon with sweet potato fries and cauliflower and broccoli cheese (since I didn’t end up making it last week).
Friday: Vegetarian shepherds’ pie with sprouts.
Saturday: Leftovers from Friday.
Sunday: Veggie roast.

I ran out of time to bake bread yesterday so I swapped meal plans with Thursday. That means that bread baking WILL happen tomorrow. I’m determined!

Thanks! All went well with Lilie’s spay. She wasn’t herself Wednesday evening, but by lunchtime Thursday she was back to her old self, including attempting to run off with some of the groceries while we were busy putting others away. Quite frankly, I wish I bounced back from surgery as quickly as that.

Isn’t amazing how quickly animals recover?
I decided to try a new-to-me recipe for artisan bread. You mix up the dough and let it set for 8-24 hours before baking. I mixed up the dough last night after we got home from a couple of events. It’s rising nicely so I’m hopeful it will be good. I’m going to bake it right before I start cooking dinner so it will be fresh from the oven when we eat. Can’t wait!
