I’m writing this Sunday night after a wonderful weekend in Dallas at the Blog Elevated Conference. Whew! My brain is spinning with all that I learned. I’ve got so much I want to start working on so I’m keeping meals pretty simple this week. If you haven’t tried my Homemade Tomato Soup recipe and are looking for a quick meal, take a look. Served along with grilled cheese sandwiches it makes a quick yet tasty meal.
Monday:
- homemade macaroni and cheese with caramelized onions
- tossed green salad
Tuesday:
- tacos
- refried beans
- chips and salsa
Wednesday:
- French toast
- scrambled eggs
- fresh fruit
Thursday:
Friday:
- Cheesy Garlic and Brown Sugar Pork Chops
- whiskey glazed carrots
- mashed potatoes
- salad
Saturday:
- grilled cheese sandwiches
- homemade tomato soup
Sunday:
We will probably go out for Mexican food after church and save half for our dinner.

I’m glad you had a good weekend, and look forward to reading what you have to share from the conference.
I’ve got a busy week ahead too, since I’m trying to catch up after spending a few days without proper internet access last week; my keyboard died Tuesday evening, and I didn’t manage to get much done using the Kindle, since I’m new to touch-screen technology, so very slow with it, and the Kindle’s online accessability is very limited. Bearing in mind, being a bit unwell after my dentist appointment at the start of the month had put me behind a bit too. On top of that, I’ve just released a new book, so I had a few things to sort for that, which slowed down my catching up process. I’m almost caught up now, but we have family visiting for the weekend, so have to do those chores we only do when we “have to” do them.
Whose idea was it to plan a book release right before a family visit anyway?
Oh, yeah… Mine! Erm… Never mind! 😉
Anyway, here’s my menu for this week… If you can really call it a menu…
Monday & Tuesday: vegetarian shepherds pie.
Wednesday: tortilla pizza pockets and cheese fries.
Thursday: scrambled eggs with fried tomatoes and hash browns.
I have no idea about Friday to Sunday, because several family members arrive for a visit Friday evening, and they don’t leave until Monday. I have no idea what we’re eating while they’re here, since it depends what ends up happening, and where we are when everyone’s ready to eat (not to mention, what all seven of us can agree on).
