Monday:
Today is Labor Day and David is off work. We are planning to go to an afternoon movie. Yes, we saw one last night and are going to another today. That’s how we roll! I had thought I’d thaw out some organic hot dogs to grill but I just checked with David and he said we’d just eat something in town after the movie. Works for me.
Tuesday:
- grilled organic hot dogs
- homemade potato salad
- fresh corn on the cob
- fresh fruit
Wednesday:
- fresh veggies cooked and served over brown rice
- salad
- fruit
Thursday:
I am going to the city with Lisa for our monthly grocery shopping trip so I need something quick and easy when I get home. Since I’m dropping off a casserole for the student lunch at United Campus Ministry on our way out of town, I’ll just go ahead and make another for our dinner.
- vegetarian cheesy pasta bean casserole
- salad
- French bread
Friday:
- black bean tacos
- tortilla chips and fresh guacamole
I have no idea what the weekend holds so I’m not going to plan anything specific. I can always whip up a pot of soup and some grilled cheese sandwiches.
