We’ve been eating mostly vegetarian recently, and I’ve also been participating in Meatless Mondays. However, I’m breaking that pattern today. Our son, the vegetarian, probably won’t be here for dinner tonight so I figure this is a good time for me to try the organic, humanely raised chicken breasts I bought and put in the freezer a few weeks ago. David hasn’t complained at all about our meatless dinners and in fact, has liked all the new dishes I’ve tried. Still, I’m sure he won’t be disappointed to see barbecue chicken on his plate tonight.
Monday:
- oven barbecued organic chicken breasts (I make my own barbecue sauce)
- mashed potatoes
- asparagus
- salad
- cherry pie
Tuesday:
- homemade pizza (toppings will include caramelized onions, black olives, bell peppers, and pepperoni)
- tossed green salad
Wednesday:
- ravioli casserole
- salad
- homemade rolls
Thursday:
- broccoli cheese soup
- homemade bread or rolls
- apple pie
Friday:
- tacos (I’ll use bison for David and myself; a meat substitute for Chris)
- lettuce, tomato, sour cream, hot sauce
- refried beans
- chips and salsa
Today I’ll be sorting through the vegetable and fruit drawers in the refrigerator to check for produce that needs to be used up quickly. I know I have a lot of citrus fruit in there, as well as apples. I’ll be making an apple pie later this week to use up quite a few apples (plus, I have one pie crust left from the holidays; I’ll make a crumb topping). I’ll juice some of the citrus and perhaps freeze some of that. I also need to chop and freeze some of the extra celery and onions I currently have on hand. In addition, I want to make some bread and butter pickles this week. It’s a super easy *recipe* I learned from my grandmother. I’ll try to remember to take pictures and share it here.
