We are headed to California for a few days. We are leaving Thursday and will return the following Tuesday. That means I am only planning three meals this week and most likely won’t put up a menu next week at all. This past week didn’t go exactly according to plan either so you’ll note some repeats.
Monday:
- egg drop soup
- fried rice
- homemade egg rolls
Tuesday:
- chicken enchiladas
- Spanish rice
- chips and homemade guacamole
I will be making an extra pan of enchiladas to take to an older gentleman in our church whose wife is in the hospital for an extended period. He has some serious health problems himself and I’m sure he would enjoy a home cooked meal.
Wednesday:
- Cajun fettuccine alfredo
- tossed green salad
- garlic bread
And then we are off to California where we will indulge in some In-N-Out Burger and hopefully some seafood.
