Monday:
- oven baked red potatoes and onions topped with grated cheese
- corn on the cob

Tuesday:
- gumbo (nope, still haven’t made it yet!)
- potato salad
- French bread
Wednesday:
- fettuccine carbonara
- salad
- French bread
Thursday:
I have a board meeting this night. It’s our annual “back to school” meeting and we traditionally share a meal. This is what I’ll be providing:
- macaroni and cheese with caramelized onions
- salad
- green beans
- cobbler
Friday:
- sour cream enchiladas
- Mexican rice and beans
- guacamole and tortilla chips
It is SO hot here that I’m trying to avoid using the oven. Our house stays nice and cool but I’m trying to avoid things which contribute to heat, thus causing the air conditioner to work harder. Tonight I’m cooking the potatoes in the toaster oven, for instance. I will have to use the regular oven on Thursday because of the quantity I’m cooking but otherwise I’m avoiding it. I’m also trying to cut back on electricity usage during peak afternoon/evening hours. That means doing laundry and running the dishwasher in the mornings. I also replaced the burned out bulb in my desk lamp with a CFL (most of our lamps have now been changed over) and using that when I’m at the computer rather than the overhead light which has three bulbs. And right now, I don’t have any light on in here. I know it may not sound like much but every little bit helps. If everyone made even a little effort it would add up to a huge savings in electricity use. Okay, off my soapbox!
