One of these weeks we won’t have numerous places to go and I’ll cook every night. This isn’t one of those weeks, however. Here’s our menu plan for the coming week:

Monday
- Macaroni and Cheese with Caramelized Onions

Tuesday
We are attending a Town Hall meeting at 5:30 so a crockpot meal is in order.
Wednesday
We have a meeting at 4 p.m. and I am giving a short talk at a Rotary meeting at 8 p.m. We’ll eat in town after the 4 p.m. meeting and I’ll just stay in town until after the Rotary meeting – nervously going over my notes!
Thursday
I have a meeting at 5:30 and East End Eats, a local music and food truck event, starts at the same time. I’ll meet David there after my meeting at we’ll eat from one of the food trucks.
Friday
As far as I know we don’t have to be anywhere Friday night – yay!

Yesterday (Monday) I had veggie wraps… As you know from seeing my #MeatFreeMonday post.
The rest of the week is going to be a week of using up leftovers. I have a bunch of leftover meals in the freezer from the past few weeks, and since I’m due to do my monthly grocery shop pretty soon, I want to get them eaten so as to clear as much space as possible in the freezer. Plus, it means I get to enjoy homemade dinners without having to cook all week, which I like the sound of (especially since I’m not feeling 100%, and have both roleplaying and a degu follow-up vet trip to deal with, despite how I’m feeling).
