Another busy week ahead, which seems to be the norm these days. Tonight we are attending a city council meeting and I have a board meeting for the area homeless services organization on Thursday. I have a hair appointment and co-op pickup on Wednesday and a birthday party on Friday. Looks like Tuesday is my only reasonably *normal* day this week!
Monday:
We have to be at the city council meeting at 5:30 this evening and since the agenda is rather lengthy I’m anticipating a long meeting. I’ll have a little snack of cheese and fruit ready for us before we go and then we’ll go out to dinner afterwards.
Tuesday:
Since this will be the one night I actually have much time to cook this week, I’ll make a somewhat more time-consuming meal.
- garlic lime chicken (will share recipe tomorrow)
- mashed potatoes
- fresh green beans
- salad
- homemade biscuits or rolls
Wednesday:
This is the day I have a hair appointment and a co-op pickup in a nearby town. I’ll be home by 5:30-ish but an easy meal will be appreciated.
- red beans (already cooked and in the freezer)
- rice (will cook extra for Thursday)
- salad
- fresh fruit
Thursday:
I have a 5:30 p.m. board meeting and won’t be home until around 7 p.m. I’ll get all the ingredients prepared before I leave so all I’ll have to do is heat up the rice and taco filling, make the guacamole and cook the tortillas.

- Mexican rice (made from the Wednesday leftovers)
- guacamole/salsa and tortilla chips
Friday:
I will be celebrating my birthday (which is August 27th) with two friends who also have August birthdays. We are all meeting at our favorite Italian restaurant for dinner and live music. So far at least 25 people have responded to our Facebook event invitation that they will be there. It should be a blast!
Saturday:
We’ve been invited to a cook-out Saturday evening with lots of friends – 34 so far. They are providing the sides and we are supposed to bring something to throw on the grill plus “something to sip on”. I’ll pick up some organic chicken breasts and marinate them in something delicious. And I think we’ll bring a nice chilled Riesling as our “sipper”, plus plenty of iced tea since the high on Saturday is supposed to be 104. Yikes.
