This week’s menu plan will be a bit short as I will be out of town the beginning of the week. I’m attending a conference for nonprofits and am pretty excited about it. I’m looking forward to learning things that will not only be helpful as board president of our local homeless services organization but for the nonprofit David and I are starting, as well.
And let’s just be honest here. I’m also looking forward to two nights alone in a hotel room – ha! Now, it’s not that I want to be away from David but I’m exhausted from not sleeping well so a couple of nights in a king size bed with the air conditioning set on “arctic blast” sounds like sheer bliss. Our bedroom at home is upstairs and just too dang hot!
Anyway, about that menu plan…
Dee’s Menu Plan
Monday
I leave for the city just as soon as I can get a few things done at home. Monday is my day to wash the bedding, do a couple of other loads of laundry, water all the plants and mainly just get the house in order from the weekend. I hope to be out of town around noon so I can have plenty of time to check out the Matisse exhibit at the OKC museum. I then have dinner plans with cousins who have graciously invited me to their home.
Tuesday
I will be at the nonprofit conference from 9 a.m. to 5 p.m. Theoretically I could go home afterwards but it’s a 90 mile drive and I’ve been warned that the conference is mentally exhausting. That’s why I made plans to stay a second night.
Wednesday
I plan to be home early afternoon. I’ll cook but I’m keeping it simple
- spaghetti
- tossed green salad
- garlic bread
Thursday
We have dinner plans with friends. We are trying out a new-to-us restaurant in a town about half an hour from us. It’s received great reviews so I’m really looking forward to it. Plus, we always have such a nice time with these two couples.
Friday
At home date night! I think I’ll surprise David (unless he reads this!) with something I used to make when we were first married – Chicken Cordon Bleu. I haven’t made it in ages. And speaking of something I haven’t made in ages…I might even make crepes for dessert.

Saturday
We are attending a wedding and David is one of the groomsmen. The wedding is at 7:30 p.m. I don’t know what the food situation is yet. If they aren’t serving a full meal we’ll just have sandwiches or leftovers before we go.
Sunday
You know the drill. Assuming we make it to church we’ll eat at our favorite Mexican restaurant afterwards and save half for dinner.

By the way, I keep meaning to tell you… I tried to sign up to your newsletter, but it won’t work. I think it might be one of those situations where JAWS doesn’t want to co-operate… *sigh*
Anyway, what’s on my menu this week? Good question… This week kind of crept up on me somehow, so I’m not sure (even though it’s already early hours of Wednesday here). Monday I had pasta with sweet and sour sauce, and Tuesday I had a veggie burger and fries (grabbed from the nearest take-away place after roleplaying). Tonight (Wednesday) I’m thinking of just making something really simple like egg on toast, because… Well, basically, because that’s what I fancy. 😉 That’s as far as I’ve gotten right now though.
