I already know that I won’t be cooking two nights this week. And I’m also going to try to avoid shopping for anything more than milk or maybe some fresh produce. I’m pretty well stocked so let’s see what I can come up with from my pantry and freezer.
Monday:
I some fresh veggies in the fridge which I need to use so I’ll be making a “vegetable medley” to serve over rice. I have carrots, red potatoes, yellow and red bell peppers, zucchini, onion and garlic. I’ll brown these in a little butter/olive oil mixture, seasoning well with whatever herbs and spices sound good at the moment. I’ll then add some water and white wine, cooking until tender and the liquid has reduced to a light sauce. This is one of my summer go-to meals.

- brown rice
- green salad
- organic strawberries for dessert
Tuesday:
David and I will be going out to dinner with a business associate. Since I won’t have to cook, this might be a good day to make some grape jelly, which has been on my to-do list for quite awhile. And Lisa, if you’re reading this, I’ll give you a couple of jars. (It’s my daughter’s favorite.)
Wednesday:
I have a noon meeting for the local recycling coalition and will also run any errands while I’m already in town. In this heat, that wears me out so a simple meal will be appreciated.
- turkey and noodles (from freezer)
- Lisa’s cheese bread (will make in the morning before the meeting)
- fresh fruit for dessert
Thursday:
David and I will be going to the city for the day and will eat dinner up there.
Friday:
- cheese enchiladas (I have corn tortillas and homemade enchilada sauce in the freezer)
- beans (from freezer)
- homemade guacamole and tortilla chips
- fresh fruit
