Monday:
- Chinese chicken soup

After a week of being snowed in I was a little bored food-wise and for some reason Chinese food sounded good. Saturday night my sweet husband drove to town (he could get out in his truck buy my car was still stuck) and bought enough Chinese food for a small army. The “dinner for five” included all of our favorites so he bought that and we ate off it the rest of the weekend. I still had enough this morning to pack lunches for the guys and I finished the last of the fried rice and the last egg roll for lunch myself. There were still a couple of cartons of egg drop soup we didn’t eat and two last pieces of garlic chicken. I used those, along with a box of Pad Thai to make the Chinese chicken soup for dinner tonight. That means we got *twelve* meals out of that dinner and there’s still some of tonight’s soup left. I’d say that was a pretty good deal.
Tuesday:
- broccoli, potato and corn chowder
- homemade rolls
I have a bunch of fresh broccoli and several potatoes on hand, as well as a bag of frozen corn. I’ll use these items to make a big pot of rich and creamy chowder with some grated sharp cheddar cheese to sprinkle on top. I’ll make homemade rolls to go with it which will make a good meal as yet another winter storm descends upon us. Sigh…
Wednesday:
- tacos made with bison
- Mexican rice
- refried beans
- chips and salsa
The last time I was in the city, just before Christmas, I picked up a package of ground bison for the freezer. I also still have a few packages in the freezer of really good corn tortillas which my aunt sent me from California. I’ll make some Mexican rice and open a can of refried beans to go with them.
Thursday:
- homemade chili
- baked potatoes
- salad
I’ll soak some dried beans overnight Wednesday and then use them to make chili in the crockpot. If there’s any leftover taco meat I’ll throw that in, too. I’ll bake some large potatoes and we can either spoon some chili over them or eat it in a bowl separately. I might make some cornbread, too.
Friday:
- Much-needed night out! (I haven’t been out of the house since last Sunday and I miss our friends.)
Saturday:
- baked chicken breasts with “Beam Me Up” bbq sauce
- mashed potatoes
- corn
- salad
