Monday:
- hot dogs (I had a package of uncured, nitrate-free, all beef hot dogs in freezer and will make homemade buns.)
- macaroni salad
- baked beans (I realized just how many dried beans I have when I organized the pantry!)
Tuesday:
- lentil soup with dumplings
- apple muffins with streusel topping
Wednesday:
- oven fried catfish (catfish in freezer)
- coleslaw (I have half a head of cabbage in the fridge that I need to use.)
- hush puppies
Thursday:
I need an easy meal tonight because I have a meeting at 5:30 and we are going to see “To Kill a Mockingbird” which is showing in a local theater at 7:00 p.m.
- quesadillas
- homemade tomato bisque soup
Friday:
I received the link to these burgers from my niece and they sound wonderful!
- black bean burgers with corn salad (I may serve them on homemade buns if I get some made.)
- French fries (I have part of a package of steak fries in the freezer, as well as some sweet potato fries. I’ll do the steak fries for the guys and a a few sweet potato fries for me.)
Saturday:
- waffles
- eggs
- fruit smoothies
I’ve got the beans cooked and in the fridge. I’ll add the various ingredients to make them “baked beans” and put them in the oven about an hour before dinner-time. I’ve also made the dough for the hotdog buns and it’s rising. Still need to make the macaroni salad but it is 70 degrees so I’m headed outdoors for a walk!
