Well, last week was pretty much a bust on meals around here. I contracted food poisoning (not at home!) and cooking was not on my to-do list. I feel much better now, thank goodness. These next two weeks are going to be very, very busy around here as we prepare for our annual Happyland Music Fest, a two-day extravaganza of fun and music which we host each year. I’m going to be cleaning, painting, planting my vegetable garden and getting our flowerbeds in order. The guys are mowing, trimming, weeding, setting up the stage area and bringing in port-a-potties. We will be working late in the evenings so dinners will need to be fast and easy with minimal clean-up. Fortunately lots of fresh vegetables are making their appearance this time of year so we’ll be focusing on those and salads that I can prepare early in the day before I’m exhausted.
Monday:
- corn on the cob
- fresh broccoli with cheddar cheese melted on top
- green salad
- strawberries
Tuesday:
- broccoli and corn chowder (will cook extra veggies on Monday)
- corn bread
- mandarin oranges
Wednesday:
David will be out of town until late in the evening and I have a hair appointment, doctor appointment, co-op pick-up and choir rehearsal which will keep me busy from noon until about 8:30 p.m. We will each just do our own thing this night.
Thursday:
- asparagus and red pepper stir-fry over pasta
- salad
- deviled eggs
- fresh fruit
Friday:
- mashed potatoes
- candied carrots
- salad
- deviled eggs
Saturday:
- pizza from our favorite local Italian restaurant
- salad
- ice cream (we’ll deserve it!)
