Welcome to a new week and a new menu plan. We have quite a few things on our schedule but I think I can work around our activities and cook every night. At least that’s what I’m aiming for.

- smothered pork chops

- spaghetti
- salad
- garlic bread
Sunday
- Mexican food after church, save half for dinner

Not exactly but I’ll tell you what. When I make them I’ll try to write it all down and take some picture then share it on the blog soon.
Hubby says he’s coming to your place for dinner tonight (Tuesday) and we both want to come on Saturday. 😉
Anyway, here’s my menu for the week:
Monday: Chocolate Ready Brek (officially a breakfast, but I don’t care… It was good!)
Tuesday: Quiche with fries and baked beans.
Wednesday: Pasta with sauce.
Thursday: Baked potato with fresh vegetables.
Friday: Fruity couscous bake with vegetables.
Saturday & Sunday: I haven’t decided yet.
Well, come on over. Ha! I’d like to hear more about that fruity couscous bake. 🙂
It’s basically couscous with dried fruit (dried apricots, sultanas, and sweetened dried cranberries) and onions, with some herbs and spices added (coriander, paprika, cinnamon, salt, and ginger) and a little lemon juice and sugar (preferably brown). I can’t give you exact amounts, since I’m not doing this from a recipe, but making up my own version of one I brought ready made a little while ago, based on the ingredients list from the package (minus the preservatives, of course). Anyway, cook up the couscous, combine all ingredients, make in to patties like you would when making homemade burgers, and bake in the oven until slightly browned (takes about 10 to 12 minutes).
