This will be another of those weeks where I won’t be cooking much. David leaves on a business trip early Tuesday morning and won’t return until Friday. He would be home earlier but he got tickets to a World Series game in St. Louis Thursday night. Chris is going to fly up and meet him Wednesday and they will attend the game together then fly home on Friday. They are both so excited. It’s rather cute. So I only need to plan meals for tonight and Friday. I’m going to take advantage of those other three nights to eat very lightly. I’ve got some sweet potatoes so one night I’ll probably bake one and have it with a salad. Another night I may have a smoothie – need to use up some fruit in the freezer anyway. The third night might be a fruit/cheese/cracker plate. I’ve got some household projects underway so it will be nice to have that extra time that I would ordinarily spend cooking and cleaning the kitchen. At least that’s what I’m telling myself. I really dislike having David gone and miss him terribly. But it’s part of the job so I have learned to make the best of it. Besides, the homecomings are always nice. 🙂
Monday:
- black bean burritos
- salad with homemade salsa ranch dressing
- homemade guacamole and tortilla chips
Friday:
- gumbo
- potato salad
