It’s a new week so that means it’s time for Menu Plan Monday. David has a business trip the first part of the week and since he’s driving I’m going to tag along. That, and a Thursday event means I will only have three days’ worth of menus to plan.

This is the final “East End Eats” (music and food truck event) of the season. I have a board recruitment event for the local homeless organization which overlaps East End Eats but I’ll be able to catch the last part of the event and will grab a taco there.
Friday
I hope we can have a night at home but you never know! Assuming we are at home, I’ll make a nice “date night” meal for us.
- Pork Loin in Cognac Sauce
- tossed green salad
- glazed carrots
- baked potatoes
Saturday
- cabbage and potatoes in Instant Pot (This will be an experiment. If it turns out well I’ll share the recipe.)
- cornbread
Sunday
Mexican food for lunch and save half for dinner.

Hope all went well on the trip out of town (I say “went” because I’m assuming you won’t read this until you get back).
Here’s my menu for this week:
Monday: Cheesy fries (yeah, I know, I’m addicted to them… But they taste good, and can be made quickly).
Tuesday: We have roleplaying, so I need something that’s not going to require much time or energy to make… I’m thinking scrambled eggs on toast.
Wednesday: baked potato with mixed vegetables.
Thursday: There will probably be leftover veggies from Wednesday’s dinner, so I’ll do something with them… Haven’t decided what yet.
Friday: Quiche with potatoes and peas.
Saturday & Sunday: I have no idea.

Thanks – it was nice to have the drive time with David just to chat. We’ve been so busy we enjoyed the time to catch up a bit.
Your Friday dinner plans sound good. I used to make quiche often back when I was raising chickens and had so many eggs. I should do that again soon.

Glad you enjoyed your time away with David.
I love quiche, and it’s a really flexible dish when it comes to ingredients, so it’s easy to make a quiche slightly different, making it easy to enjoy quiche regularly without having the same meal over and over again.
