Here it is, time for another Menu Plan Monday. David will be out of town on a business trip three nights this week. Ordinarily I wouldn’t plan to cook those nights and just make myself a sandwich, salad or smoothie. However, it occurred to me that I deserve a nice meal even when I don’t have someone else to cook for.
This week I’m going to take advantage of those nights alone to cook things I love but David isn’t as keen on. He’s not a big fan of seafood so I usually only indulge in restaurants. Risotto isn’t a favorite of his, either. This week, I’m going to treat myself.

Our musicians are doing a jam session at our favorite Italian restaurant so we’ll probably eat there.

Mexican food after church and save half for dinner.

Absolutely! When David is out of town is the perfect time for you to cook the things you love and he’s not too keen on.
I don’t have a menu for this week. On Monday I had a veggie burger and fries with salad. On Tuesday I had veggie tacos. I didn’t end up having the pasta with sauce last week, so I’m thinking I’ll have that for Wednesday’s dinner. But that’s as far as I’ve gotten when it comes to planning my meals this week.

I made the risotto last night and our son, Chris, took a bowl of it over to his house. Later he texted me saying it was delicious. At least “he” appreciates a good risotto – ha! Btw, if you like risotto, the recipe can easily be made vegetarian by swapping vegetable broth for the chicken broth.
