I’ve been trying to remain in a pleasant state of denial regarding the end of summer but a glance at the calendar this morning reminded me that this Thursday is the “First Day of Autumn”. Don’t get me wrong; I love fall. It’s winter that I despise and without fail, that’s what follows on the heels of autumn. At least for now, it’s still quite warm here so I can postpone excessive fretting.
I’ve been looking up some new vegetarian recipes and some kind vegetarian friends have offered some advice. I think I’ll make this week a sort of “International Vegetarian Foods” week. Fortunately, many ethnic cuisines have vegetarian options, in part because they usually aren’t heavily meat-based anyway. So, let’s see what we can come up with.
Monday (American – Cajun):
- Vegetarian Jambalaya (I’m going to try adapting my recipe)
- homemade potato salad
- French bread
Tuesday (Chinese):
- homemade egg rolls
- fried rice
- homemade sweet and sour sauce
- fresh pineapple
Wednesday (Mexican):
- vegetarian slow-cooker enchiladas
- Mexican rice
- salad
Thursday (Italian):
- Creamy Artichoke Pasta
- salad
- garlic bread
Friday (French):
- vegetable quiche
- salad
- French bread
Saturday:
- I think I’ll be ready to eat out. 🙂
