Menu plans are a bit sketchy this week due to unusual schedules and plans that haven’t been firmed up yet. But here’s the way things look at the moment:
Monday:
*vegetarian Mexican casserole
*organic corn chips
Tuesday:
*Moroccan Chicken
*brown rice
*fruit
Wednesday:
*New Year’s Eve — we’ve yet to firm up our plans but it looks like we’ll hit a couple of parties so dinner will be snacks and finger foods…washed down with champagne, of course.
Thursday:
*We’ll be watching the Rose Bowl football game (Fight on, Trojans!) and might have company here for that. I need to come up with something simple that won’t require a lot of time in the kitchen. Any suggestions?
Friday:
*David and I will be going to Enid on business and eating dinner out somewhere.
I wanted to cook a turkey breast this week as we never did get turkey leftovers after Thanksgiving or Christmas. Looks like that will have to wait until next week.
