I didn’t get as much done today as I had hoped. I had another episode of hives during the night and was left with a Benedryl-hangover this morning. I went back to sleep after David left and slept another couple of hours. I’ve been dragging all day so I scaled back my plans.
I did manage to clean out, inventory and organize the bottom freezer compartment of our refrigerator. I found some things I’d forgotten I had, such as a package of ground bison. We don’t eat much meat these days so this package will easily make a couple of meals since I’ll use it as more of a condiment than a main part of a meal.

Tonight I made a vegetable curry over brown rice. I had planned to make naan bread but while cleaning the freezer I found a package with three whole grain pitas left. I toasted those instead and was happy to postpone naan baking for another day. I wrote about our dinner here, in case you are interested in how I made it. I also talked about last night’s dinner of homemade egg rolls, fried rice and sweet and sour sauce. So far we aren’t hurting a bit with this challenge. 😉
We also had leftover waffle batter from our belated Christmas celebration on Sunday so David cooked those after dinner tonight. I didn’t want to waste it so we will have waffles for breakfast tomorrow and there will still be a few to freeze for another day.
I’m going to try to get to bed early tonight so with any luck I’ll have more energy tomorrow. I plan to tackle the chest freezer so check back to see what treasures lurk within. It isn’t quite as much of a mystery to me as it would have been a couple of months ago before David inadvertently turned off the breaker to the freezer while remodeling the laundry room. He didn’t discover it until over a week later (we were out of town during that time or I would have noticed) so we lost everything in it. And it was crammed! Oh, well. At least I have a good opportunity to organize the current contents and hopefully keep up with it so things don’t sift to the bottom, forgotten and forlorn.
