Many are beginning to realize the importance of pantry staples and being able to make a delicious meal from those items. Beans, lentils, rice and pasta are great to keep on hand because they last for a very long time and are quite versatile. One item I don’t see as often on these pantry lists is dried split peas and that’s a shame. If you haven’t had a steaming hot bowl of split pea soup lately, you are missing out. And if you have an Instant Pot you are only an hour away from an easy and nourishing meal.
There is nothing quite so satisfying as a rich and creamy potato soup on a chilly evening. And if that soup includes lots of delicious smoked gouda cheese? All the better!
This one is so quick and easy that there isn’t much reason to ever resort to canned tomato soup.
Corn Crab Bisque ~ New Orleans Style
I’m a sucker for rich and creamy soups. Add seafood to it and I’m sold. This is my take on a recipe for corn crab bisque I got from the New Orleans School of Cooking and it’s truly a keeper. It’s extremely rich so a small bowl with a hunk of good, crusty French bread is all you need.
We are big fans of gumbo around here. There is nothing quite like a steaming hot bowl of gumbo on a chilly winter night. Gumbo isn’t difficult to make but it takes a bit of time and attention to make the perfect pot of it. But sometimes time is short and a couple of hours of simmering just isn’t in the cards if I want dinner on the table before 9 p.m. That’s where the Instant Pot comes in.

I sometimes hear people say they don’t like soup. I can understand not liking a certain type of soup but the entire category of soup? It’s one of my favorite things and I especially enjoy making a good homemade soup from leftovers.

I think soup is underrated. As a food it’s often as budget friendly a meal as any you can manage and super nutritious as well. I mean, come on, soup has broth and vegetables and is just pure goodness.
I think soup is a comfort food. A few years ago, after I had a health issue, I craved soup and ate it every day for weeks upon weeks. I truly consider it to have had healing properties for me, not just due to the good ingredients, but because my body recognized I was caring for it.
I still crave soup and try to incorporate it into the menu in all but the very hottest of months.

I agree! Like you say, it can be very frugal. I like to take various leftovers at the end of the week and turn them into soup. Fortunately my guys love soup, too, and never complain when I do this.
We have a local Italian restaurant that makes the best soups. All of their entrées come with soup or salad. As long as the soup doesn’t have mushrooms (I’m allergic to them) I always choose the soup. I mean, pre-pandemic when we got to eat in restaurants – ha! And I would make that choice even in the summer. We eat other hot foods so I don’t see why I can’t have soup. 🙂

I didn’t like soups and stews for a long time after an experiment of my Dad’s involving marmalade (which, by the way, doesn’t work well in stew). But these days I love soups and stews, especially mushroom soup, and vegetable stew.
