THIS WEEK WITH DEE
I took last week off from the “This Week” posts as we went on a short trip to Arkansas with friends. But I’m back!
MENU:
I’m keeping meals simple this week. I’d love to hear what is on YOUR menu!
Monday…
One night on our recent trip we had a “snacky dinner”. The guys made a platter of fresh fruit and another with meats, cheeses, crackers and cherry tomatoes. They also heated up the leftover queso from the night before and opened a cup of guacamole. The four of us sat around the table with our cocktails and nibbles. We enjoyed it and I think it will be a regular weekly meal during the rest of this summer.

Tuesday…
This is our usual Tuesday night dinner but we haven’t had tacos in a couple of weeks. I made a Mexican casserole once and we were out of town last week. But I’ve got a huge package of corn tortillas so we will enjoy one of our favorite dinners this night.

Wednesday…
This is such an easy dinner. I cover a sheet pan with foil and use non-stick spray on it. Well-seasoned chicken and a whole bunch of fresh veggies bake together for a tasty meal with minimal cleanup.

Thursday…
I have part of a bag of frozen meatballs in the freezer and a jar of Classico spaghetti sauce in the pantry. I’ll toss a salad and put frozen garlic bread in the oven for another easy meal.

Friday…
David will grill the burgers while I heat up the baked beans and put the fries in the oven. I’ll make the coleslaw earlier in the day and refrigerate it.

Saturday…
Most likely we’ll pick up a takeout meal this night. The cook needs a night off, right?

A bagged Caesar salad kit topped with blackened chicken tenders will make an easy Sunday evening meal.

IN MY HOME:
REVIEW OF LAST WEEK
Monday…
We left for Arkansas on Saturday morning. The guys fished each day while Monica and I relaxed, chatted and read at the Vrbo. When the guys returned and cleaned up they drove to town to pick up food from a Mexican restaurant for our dinner. Rob made a pitcher of margaritas and we all enjoyed a nice meal together.
Tuesday…
The guys fished in the morning, came back around noon and we all went out for lunch. It was rather warm but the view of the river from the restaurant deck was just lovely. They went fishing again and got back rather late. Monica and I decided to let them figure out dinner since all the restaurants were closed. We had all brought quite a lot of food with us so they were able to put together a fruit plate and another platter of meats, cheeses, crackers, cherry tomatoes, etc.
Wednesday…
We left our Vrbo around 10 a.m. and were rather pleased with ourselves for leaving earlier than expected. And it turned out to be a good thing because David’s truck battery died part way home and he had to replace it in the parking lot of O’Reilly Auto Parts. But not until after removing the alternator, taking it in to be checked, finding out it was okay, replacing it and THEN replacing the battery. Fortunately he carries tools with him and as a former mechanic he was able to do all this in a remarkably short amount of time. Rob and Monica had followed us back to O’Reilly’s to make sure we made it okay (had to backtrack about 10 miles) and then we sent them on their way.
We were home by about 7 p.m. so it wasn’t terribly late. But it was sure good to be home!
Thursday…
I unpacked, did laundry, and finished a blog post. Chris offered to pick up Jimmy John’s sub sandwiches for dinner which was much appreciated. The three of us watched “His Girl Friday” together – such a fun film!
Friday…
Chris had a flat tire on his way home from work the night before so he took my car to work. David took his tire in to be repaired and since I needed to pick up some food for my mom, I rode with him. We dropped it off for her and then headed home and back to work for both of us after a quick lunch. I worked on another blog post and did the usual daily household tasks.
We had Facetimed with Charlotte while in Arkansas and she asked if she could come over. We explained we were out of town but that we would bring her donuts Friday night. Of course we couldn’t disappoint her! The donut shop opens between 9:30 and 10 p.m. so it was rather late by the time we picked them up, dropped some off for Lisa and Justin, and then spent about 45 minutes with Charlotte. She nibbled on her donut but was way more interested in playing with Gramma and Grampa. It does my heart good to see her face light up when she sees us.
Saturday…
I was rather tired this day so I mostly worked on things from my chair. I did our weekly menu, started a grocery order, and finished a blog post. I had made a big pot of vegetable beef soup Friday night so we had leftovers for dinner.
Sunday…
I made new graphics and scheduled social media, watered plants, washed sheets and remade the bed, and placed my grocery order. I made up a bagged Caesar salad which the three of us shared plus whatever else each wanted. I think David and Chris had some of the leftover soup and I scrambled myself some eggs.
David and I watched “Weekend at Bernie’s”, an old favorite we hadn’t watched in years. I know we had it on DVD and am almost certain we saw it just a few weeks ago when we bought the new entertainment cabinet to go under our new t.v. We had taken everything out of the old center, sorted and put them in the new one. But do you think we could find it? Nope. I hope we didn’t inadvertently put it in the box of things we donated. In any case, David just went ahead and rented it on Amazon Prime because we were really in the mood for it. Still cheap entertainment and laughter is priceless.
THIS WEEK
I need to hurry up and go get my grocery order so this section will be VERY brief with just the highlights.
Monday…
Pick up Rx refills and grocery order. Take groceries to my mom.
Tuesday…
I have a Zoom call. I also need to clean the bathrooms.
Wednesday…
I don’t think I have anything scheduled this day so I plan to clean house. I especially need to vacuum and mop floors.
Thursday…
I have another Zoom call.
Friday…
We plan to meet our niece and her little boy who are in town from California. We are going to meet at the park and will pick up Charlotte to go with us.
Saturday…
We are going to be out of town a few days next week so I need to schedule social media and perhaps a blog post.
Sunday…
Wash sheets, water houseplants and pack.
