I enjoy a good casserole, especially as the weather begins to cool down. The options are endless and most are somewhat flexible. Cheesy Cabbage Casserole is full of healthy vegetables but made extra tasty with a nice layer of gooey cheese on top. It’s vegetarian, too, in case you are trying to lower your meat intake.

Tasty meatless casserole
Ingredients
- 4 cups cabbage, cut in bite-size pieces
- 1/2 onion, chopped
- 1/2 red bell pepper, chopped
- handful cherry tomatoes, cut in half or fourths (optional)
- 1 medium carrot, grated
- 1 8 oz. pkg cream cheese, softened
- 2-3 tbsp parmesan cheese
- salt, pepper, garlic powder to taste
- 2-3 cups grated cheese (I used cheddar and mozzarella)
- dried parsley for garnish
Instructions

Combine chopped cabbage and other vegetables, cream cheese, parmesan and seasonings in large mixing bowl. Mix well.

Spread cabbage mixture in lightly greased baking dish (I used 11x13 lasagna pan.)

Top with grated cheese and dried parsley.

Bake at 350 degrees for 30-40 minutes or until cabbage is tender.
You can add or substitute other vegetables. Broccoli or cauliflower would be good. Use what you have and whatever your family likes best. If you add more veggies you might need to add a couple of tablespoons of mayonnaise or a little more cream cheese to moisten the mixture.
If you like your vegetables very well done, cover with foil and bake for 30 minutes before adding the cheese. Remove aluminum foil, add cheese and cook another 20 minutes or so. We like ours with a bit of texture to them and 30 minutes total (uncovered) was just right.
Here it is plated up with a side salad. We all really enjoyed this simple casserole. It makes a perfect meatless dish but you could add sliced smoked sausage or chunks of ham. You could also serve it as a side dish.
Note: One of my readers recommends Violife brand cream cheese, a vegan alternative. If you have a good recommendation for a vegan cheese replacement (preferably something that melts well!), please share in the comments.

The brand is called VioLife. I just looked online, and it says it’s available at Wholefoods stores nationwide in the USA. They have fantastic cheese alternatives: the cream cheese and original block are great, and the Greek style is incredibly close in both taste and texture to dairy feta. I can’t vouch for their other cheeses, since I only use those three.
