Despite the challenge, we are eating quite well. For dinner tonight I made chicken breasts in Parisian wine sauce, glazed carrots, mashed potato casserole and a green salad.
I sautéed the boneless chicken breasts (seasoned with garlic salt, pepper, Creole seasoning and Herbs de Provence) in a combination of olive oil and butter. When nearly done I added about a tablespoon of finely chopped red onion, cooked a couple of minutes and then deglazed the pan with white wine. I added about 1/2 a cup of red grapes cut in half and about 1/2 a cup of cream. Simmered gently until heated through.
The organic carrots were thinly sliced and cooked in a bit of olive oil and butter with some brown sugar added to give them a nice glaze.
We had leftover mashed potatoes from last night so I stirred in a couple of big spoonfuls of sour cream, topped with grated cheddar cheese and freshly ground black pepper then heated in the oven. Just before serving I turned on the broiler to lightly brown the top.
It was a darn good dinner, if I do say so myself.
