We are big on Taco Tuesday around here. I could easily eat good ol’ tacos (made with fried corn tortillas, of course) every week. But sometimes it’s fun to switch things up. Enter: Easy Tortilla Casserole. Layers of flour tortillas, beans and cheese baked until hot and gooey make for a delicious weeknight meal.
Easy Tortilla Casserole
I love the fact that this uses just a few ingredients and can be assembled quickly.
Easy Tortilla Casserole
Ingredients
- 6-8 flour tortillas
- 1 can refried beans
- 1/2 cup salsa or picante sauce
- 2 cups cheddar cheese, grated
- 1/2 cup Cotija cheese (optional)
Instructions

Lightly grease round pie plate or other baking dish.

Heat refried beans in sauce pan over medium heat, adding a bit of water if needed to create a spreadable consistency.

Place a tortilla in baking dish and spread with layer of refried beans.

Spread with a spoonful of salsa.

Sprinkle with grated cheddar and a bit of Cotija cheese.

Repeat several layers.

Top last tortilla with refried beans and cheese and bake at 350 degrees until hot and bubbly.

Cut in wedges and serve with hot sauce, sour cream, lettuce, tomato, green onions, or your favorite taco toppings.

Here it is just out of the oven and sprinkled with green onions. Anyone else love those crispy browned bits of cheese? Cook’s privilege!

I served it topped with green onions and sour cream, along with a simple green salad, multigrain tortilla chips and salsa.
This recipe is very adaptable. While this version is vegetarian you could substitute non-dairy cheese for a vegan dish.
Or add layers of cooked and seasoned ground beef if you are serving die-hard meat eaters. Shredded chicken would be delicious, too. Use your favorite cheeses, too. I used extra sharp cheddar, pepper jack and cotija.
If you are serving a crowd you could also make this in a 9×13 baking dish. Layer the bottom with tortillas and create layers from there. Cut in squares to serve.
