Here it is…time for another Menu Monday. It’s Valentine’s Day this week so we will have a couple of special dinners AND a night at our favorite hotel!

MENU MONDAY
Monday
Meatless Monday – I have part of a head of cabbage, some potatoes and carrots on hand, all of which need to be used soon. What better way to use up veggies than in a steaming pot of yummy soup?

Tuesday
We are going to the city for an early Valentine’s Day celebration.
Wednesday
I’m not sure what time we will return from the city so I’ve planned an easy dinner. I’ll season the chicken breasts, bake until almost done, baste with sweet and sour sauce and finish cooking. I’ll cook the rice in my rice cooker and steam a bag of frozen veggies in the microwave. Easy!

Thursday
I’ve been researching dietary suggestions for my autoimmune disease and cold water fish is highly recommended. David isn’t a huge fan of fish but we’ll have some chicken leftover from Wednesday for him. And any meal with homemade mashed potatoes is a hit around here.

Friday
I was going to cook a special Valentine’s Day meal for us at home but David reminded me that the Elks Lodge (we are members) is doing a prime rib dinner. We’ll attend that and I’ll do a fancy dinner at home another night.
Saturday
Since we’ll have had a couple of heavy dinners this week I think we’ll have big salads topped with grated sharp cheddar, hard boiled eggs, tomatoes and croutons.
Sunday
We’ll eat out after church.

Sounds like a busy week again. Hope you’ll have a quieter one next week, so you can have some time to recover from it. Also, hope you enjoyed your early Valentine’s celebration (since it’s now Thursday, so you’ll definitely be back from the city by now).
We’re having a late Valentine’s meal next week. The dogs have a grooming appointment next Friday, so we’ll either go for something while they’re at the groomer, or take them to one of the places they’re allowed in afterwards, depending on how long it takes us to run the errands we need to while they’re in being groomed. Because we’re doing that, we aren’t doing anything special this week. Anyway, here’s my menu for the week, with a bit of a cabbage theme, and a meal very similar to one of yours.
Monday: baked potato with kale and spinach salad.
Tuesday: garlic mashed potatoes and herby cabbage.
Wednesday: Leftovers from Tuesday.
Thursday: Cabbage and root vegetable soup with fresh bread.
Friday: Leftovers from Thursday.
Saturday: Tofu salad wraps.
Sunday: Lentil toccos and salad.

I’d like to think next week will be less busy but I have a meeting in town, one in the city (hour and 45 minutes away), and choir rehearsal. Oh, well…such is life. Ha! We did have a very nice early Valentine’s Day getaway and I was able to sleep in, which was nice.
I hope you and Kelly have a nice Valentine’s meal next week!
