Grilled Cheese Tacos
Taco Tuesday is a regular thing in our household. I generally make them with fried corn tortillas. But sometimes it’s good to switch things up and these grilled cheese tacos are the perfect alternative.
If you happen to have picky eaters in the family, you could always just make them a plain grilled cheese sandwich. I had one of those and there is no telling how many grilled cheese sandwiches that child ate!
This recipe makes two tacos, generally enough for one person. Just scale it up for the number you are serving. I find that a pound of ground beef will make about 4 generous servings (2 tacos each).
Grilled Cheese Tacos
Ingredients
- 2 slices bread thinly sliced, soft
- 2-4 tbsp softened butter
- 1 cup sharp cheddar cheese, shredded
- 1/3-1/2 cup cooked, seasoned ground beef
- shredded lettuce, tomatoes, green onions, hot sauce
Instructions

Cook ground beef and season to taste. I use garlic salt, onion powder, cumin, chili powder, and black pepper. Or season with taco seasoning mix.

Drain meat and keep warm.

In large skillet or on a flat griddle/grill pan, on medium heat, place two slices of bread, buttered side down.

Sprinkle shredded cheese on both slices.

Cook until buttered side is nicely browned and cheese is melted. You may need to cover the pan to help melt the cheese.

Remove bread from pan and spoon cooked taco meat onto each slice. Fold on the diagonal and top with your favorite taco toppings.
We like to top our tacos with shredded iceberg lettuce, diced tomatoes, sliced green onions, hot sauce and sour cream. Load those babies up! Yes, they are a bit messy but that’s what napkins are for, right?

For vegetarians, substitute cooked lentils or black beans for the ground beef.
