Our weekly menu…
We returned from our vacation to New Orleans on Wednesday night. I didn’t make a menu for this week but am just winging it. Thursday was David’s birthday and his dinner request was sweet and sour meatballs over rice. I served this with steamed broccoli. I also baked cherry cobbler for him and served it à la mode.
When I was making the meatballs last night I went ahead and mixed up the whole package of ground beef (1.64 lb.). I made a whole sheet pan of meatballs but still had quite a bit left. Tonight I cooked the rest of them and then made a sort-of Swedish meatballs meal from them which I served over egg noodles. We had this along with candied carrots and a tossed green salad.
Tomorrow we have to take my car to the city to be serviced. We will have a late lunch while up there. I’m not sure what we’ll do for dinner – probably something light like a salad.
On Sunday, David will cook a pot roast with potatoes and carrots in the crockpot. I bought a can crescent rolls to go with it.
