I had planned to make tacos Tuesday night but Chris and David were both going to be out late and I didn’t want to be cooking tacos that late. David was already in town so I asked him to pick up takeout. We’ll have the tacos tonight and move the spaghetti to next week.

Crusty Herb-Dijon Baked Chicken Quarters
This was quite good and something I’d make again. Chris wasn’t home but I sent a portion to my mom. We used some of the meat for sandwiches for our lunch on Tuesday. Earlier today I simmered the skin, bones and some vegetable scraps I’d been saving in the freezer to make chicken stock. I now have 4 one-cup portions, plus a 1.5 cup portion of chicken stock for the freezer. I think that’s pretty good from $4.61 worth of chicken.
