Are you looking for a weeknight meal that is both easy AND healthy? Mediterranean Style Chicken and Veggies Sheet Pan Dinner to the rescue! It takes just a few minutes to prep, 30 minutes in the oven and very easy cleanup. Oh, and it’s delicious, too!
Mediterranean Style Chicken and Veggies Sheet Pan Dinner
It’s been “one of those days”. You need to get dinner on the table with a minimum of fuss and you definitely don’t want to face a sink full of pots and pans afterwards. Sheet pan dinners are perfect for those nights!
In the time it takes to preheat the oven you can prepare the chicken and vegetables. Then just pop it in the oven, set the timer and relax with a cup of tea. Or a glass of wine. Hey, we’ve all been there.
Just before the timer goes off, toss a quick salad and set the table. And since this all takes so little time and effort, let’s go ahead and use real dishes and cloth napkins. Just because it’s an easy meal doesn’t mean we must resort to paper plates, right?
Then sit down to a delicious…and healthy dinner!

Mediterranean Style Chicken and Veggies Sheet Pan Dinner
Easy and healthy weeknight dinner with minimal cleanup!
Ingredients
- 2 large boneless chicken breasts sliced horizontally to create thin cutlets
- 1-2 zucchini cut in bitesize chunks
- 1-2 yellow squash cut in bitesize chunks
- 1/2 red onion thinly sliced
- 1-2 red bell peppers sliced
- 2 tbsp olive oil
- 4 tbsp sun dried tomatoes packed in oil
- 1 tsp sea salt
- 1 tsp freshly ground black pepper
- 1 tsp garlic powder or granules
- 1 tsp oregano
- 1 tsp basil
- 1 tsp rosemary
- 1/2 tsp thyme
Instructions

Prepare sheet pan by covering with foil and spraying with olive oil cooking spray.

Preheat oven to 325 degrees.

With a sharp knife, slice chicken breasts horizontally to create 4 thinner cutlets. This decreases cooking time.

Prepare vegetables.

Place chicken and veggies on prepared sheet pan.

Drizzle with olive oil.

Spoon 1 tablespoon of sun dried tomatoes on top of each piece of chicken.

Combine salt, pepper, garlic powder, oregano, basil, rosemary and thyme. Sprinkle on chicken and vegetables. Use more or less according to taste. May substitute Herbes de Provence for the oregano/basil/rosemary/thyme for a different but equally delicious flavor.

Place sheet pan in preheated oven and bake approximately 30 minutes or until chicken is done.

All you really need with this is a nice, tossed salad. But you could also serve with rice, couscous or quinoa.

I love sheet pan dinners! They’re so easy and healthy. We always use real plates/dishes and cloth napkins. Last time I bought paper plates and napkins was my son’s graduation party, three years ago – only because we had a big crowd. 🙂

If you have any favorite sheet pan recipes I’d love to see them. I can’t remember the last time I bought paper plates. Once in awhile I’ll buy fancy paper napkins for a special occasion if I happen to see some I really like. But then it feels weird to use paper since we are so used to cloth.
