Our weekly menu…

I’m writing this on Thursday evening and so far we are on track with our menu for the week.

Monday night’s stroganoff was made from Sunday’s pot roast and served over egg noodles.

On Tuesday, I made our tacos with more of the leftover pot roast that I shredded and seasoned with hot sauce. Yum!

David was out of town so Chris and I had sushi Wednesday night (David isn’t a fan). 

Tonight’s chicken and rice was made with chicken drumsticks and used this recipe:

Oven Baked Chicken and Rice

This is the second time I’ve made used this recipe and it’s a keeper.

    I have never made stroganoff with leftover roast. One of my readers suggested it but I haven’t done it yet. However, I am learning to love tacos made with chuck roast. And quesadillas.

      It’s an easy and delicious way to use leftover roast. I hadn’t made it in a long time but I heard something about stroganoff and it reminded me. Honestly one of the best things about cooking a big pot roast are the leftovers.
