“Toad In The Hole” is a popular dish where I grew up. I never knew until I started talking to people online on a regular basis that there was anyone in the world who didn’t know what it was. But whether you know what it is or not I have the recipe for you.
Before I give it to you though, let me tell you that you can make this one vegetarian friendly by simply exchanging the sausages for something more vegetarian friendly. Personally, I usually exchange it for mushrooms, but if you can’t use mushrooms for some reason then you could always use something else like sweetcorn or peppers.
OK, so let’s get to the recipe…
You will need:
- 1 cup all-purpose flour
- 2 eggs
- 1 cup milk
- 1 lb. small, fresh sausages, cut in to pieces and with their skins removed (or a vegetarian friendly alternative)
- 1 onion (chopped)
- 2 cups chopped tomatoes
What to do:
To make the batter in a blender:
Combine the flour, eggs and milk and blend at high speed for 2 or 3 seconds. Turn off the machine, scrape down the sides of the jar and blend again for 40 seconds.
To make the batter by hand:
Beat the eggs with a whisk or a rotary or electric beater until frothy. Slowly add the flour, beating constantly. Then pour in the milk in a thin stream and beat until the mixture is smooth and creamy.
Refrigerate the batter for at least 1 hour.
Arrange the sausage pieces (or whatever you’re substituting them with), onion and tomatoes in a single layer in an oven safe dish, then pour the batter over them.
Bake in the middle of a preheated 400 degree (fahrenheit) or 200 degree (celsius) oven for 1 hour or until the pudding has risen over the top of the pan and is crisp and brown.
