Hawaiian Meatballs (the easy version)
Ingredients:
1 jar sweet and sour sauce
1 can pineapple chunks or tidbits with juice
1/2 T. soy sauce
1/4 c. brown sugar
1T. vinegar
1/2 green bell pepper, cut in chunks
1/2 med. onion, cut in chunks
1 tomato, seeded and cut in chunks (opt.)
Make meatballs from your favorite recipe. I use cracker crumbs, salt, pepper, garlic powder and egg. Brown and cook in skillet; add onion just before done. Drain well. In large saucepan, combine sweet and sour sauce, pineapple, brown sugar, bell pepper, vinegar and soy sauce. May also add some ginger to taste. Bring to a boil. If too thin, add a bit of cornstarch blended in small amount of water. Taste. If too sweet, add a bit more vinegar; if too sour, add more brown sugar. Reduce to simmer; add meatballs and tomato. Simmer gently about 5 minutes. Serve over hot rice with crunchy Chinese noodles on top.
You can also make all the sauce from scratch with basically the same ingredients (minus the jar of sweet and sour sauce). I don’t have quantities for that as I do it entirely by feel, taste and instinct. In that case, you would need some garlic and ginger (unless you don’t like it). Hope that all makes sense.
