Good morning, friends! It’s a new week and you know what that means…Menu Monday! This week’s menu will be a bit shorter than usual but I’ve got a couple of new recipes to try that I’m excited about. Let’s take a look, shall we?

DEE’S MENU
Monday
- Instant Pot Mediterranean Chicken
- brown rice
- salad with feta cheese and balsamic dressing
- green beans
Tuesday/Wednesday/Thursday
David will be out of town Tuesday through Thursday so I’ll just make myself a salad or something simple those nights.
Friday
Saturday
Date night!
Sunday
I haven’t been in the habit of cooking on Sundays but since we are trying to eat out less I’m going to start planning something super easy to fix at home on Sundays. I’ll buy one of those bagged salad kits and just add some grilled chicken.

I like the fact you’re finding some salad options that don’t rely on lettuce. I don’t like to have a lot of lettuce, so like to see alternative salads.
I do like lettuce but it’s definitely good to have some variety.
