It seems like ages since I planned a menu. We were out of town for a full two weeks and now I’m trying to get back into the usual routine again. I’ve still got partially unpacked suitcases on the floor and a to-do list a mile long! Let’s start with this week’s menu, shall we? And then I’ll tackle those suitcases…
Dee’s Menu
Monday:
I made spaghetti for our dinner last night and have leftover sauce. I’ll use it to make a casserole tonight.
- baked penne pasta casserole
- tossed green salad
- garlic bread
Tuesday:
Just before we left for our vacation I ran into a friend in town. She and her husband have been dear friends for years but we’ve all been so busy we haven’t gotten together in months. Right then and there we pulled out our phones and scheduled a dinner date. There are some serious storms predicted but I’m hoping they won’t affect our plans to go out this night!
Wednesday:
- roast in the slow cooker
- mashed potatoes and gravy
- salad
- green beans
Thursday:
I’ll shred some of the leftover roast for the tacos.
- tacos (shredded beef in fried corn tortillas)
- lettuce, tomato, green onion, sour cream, hot sauce
- seasoned rice
- refried beans
Friday:
Saturday:
- grilled burgers
- lettuce, tomato and all the other usual toppings
- French fries
- baked beans
Sunday:
We’ll do the usual – eat Mexican food after church and save half for dinner.

Welcome home! Good luck getting caught up on everything.
Monday I had roast potatoes and veggies (carrots, green beans, and sweetcorn) that I had left from the day before.
Tuesday I had fries with sweet and sour sauce.
Tonight (Wednesday) I’m having something I call “omlett dogs” (a cheese omlett put in to hot dog buns with some fried onion; it’s something I sometimes have if hubby is having hot dogs, which he plans to tonight).
Thursday is roleplaying day, so whatever we have will be something quick and simple (which seems to be the theme for this week).
I haven’t decided about the rest of the week, but since I also have roleplaying Saturday, and hope to get a decent chunk of writing and editing in on Friday, I’ll be continuing the theme of “something quick and simple” for those days at least.

I love that omelet dog idea! Have you ever tried making homemade hot dog (or hamburger) buns? I haven’t in quite awhile but now I want to just so I can try this.

I’ve made bread rolls (both long ones that can be used as hot dog buns, and round ones that can be used as burger buns). But I’ve never tried making anything fancy like sesameseed burger buns, or anything like that. This time we brought hot dog buns up the road though.
