Monday:
David will be attending classes in order to renew his Emergency Medical Responder certification. These are from 6-10 p.m. on Mondays and Thursdays. He plans to go straight from work and just pick up something to eat on his way. That means I’ll just be cooking for myself those nights. I think for tonight I’ll do a repeat of what I whipped up for us last night.

- angel hair pasta with creamy wine sauce
In large skillet, heat butter and olive oil. Add wedges of fresh tomatoes (from my garden!) and minced fresh garlic. Gently shake pan over medium heat for a minute or two. Add a splash of white wine and season with salt, freshly ground pepper and basil. When heated through, remove from heat and add a little cream. Toss with cooked angel hair pasta and top with parmesan cheese. This was one of those “what can I make quickly with what I have on hand” dishes and it turned out absolutely delicious. David was duly impressed. 🙂
Tuesday:
- black bean and corn tacos
- lettuce, tomato, onion, grated cheese, sour cream (taco toppings)
- Mexican rice
Wednesday:
We may be having some friends over to hang out on the porch with us around 9 p.m. That means I need an easy dinner with minimal clean-up.

- homemade potato salad
- fruit
Thursday:
David has class again so I think I’ll just make myself a smoothie.

David is taking me to the city for two nights at the Skirvin in celebration of my (gulp) 50th birthday.
