Another hectic week ahead for us! Saturday is an all-day event that we’ve been working on for months. I’m excited about it but also looking forward to getting past it. My birthday is the following Monday and we are going out of town to celebrate. And sleep. Ha! I have planned simple meals for this week’s menu, including something from the freezer and one that we didn’t end up eating last week. Let’s take a look, shall we?

DEE’S MENU
Monday
We have a meeting at 5:45 so I need something I can throw together quickly when we get home. I didn’t end up making the chicken Pad Thai last week so I’m moving it to today. I cooked the chicken last night so all I have to do is chop and sauté an onion then add the Pad Thai simmer sauce and cooked chicken. Rice noodles cook very quickly and I’ve got frozen Asian-style veggies. Easy!

Tuesday
I have a hair appointment and a short meeting this afternoon. Sounds like a good day for a slow cooker meal. The pork chops I made last week turned out SO good! I’m going to repeat them and this time I’ll take pictures so I can share the recipe.

Wednesday
- BLTs on brioche buns
- sweet potato fries
- fresh fruit
Thursday
We have a meeting at 6:30 so we need to eat early and fast. Fortunately I have some jambalaya in the freezer.

- potato salad (I’ll pick some up from a local BBQ place)
- French bread
- orange slices
Friday
Tomorrow is our big music festival. I have a hunch there will be last minute things we need to do. We’ll likely end up grabbing a bite to eat in town or picking up pizza.
Saturday
AdaFest! We will be in town all day. There will be lots of food trucks do we’ll eat at one of those.
Sunday
We will be exhausted. I have no idea what we will eat but I do know I won’t be cooking. Ha!
